old leather vs new leather

Good Morning All,
 
When you buy a used, sorry vintage, buckle set that has a belt attached, what do you do?  Some of the sets have really nice leather that has interesting designs etc.  and that makes it difficult for me to cut them.  It doubles if it appears that the leather is original to the set.  So there is the question, original or free for new leather?  Since we are collectors let's leave fit out of the equation.
